Today was just one of those days for me. A day when I wanted to pull my hair out on many occasions. I had an early morning meeting (and if you know ANYTHING about me, you know how much I DESPISE early mornings), and from second one my darling little kindergartners were acting.....let's just say.......OUT OF CONTROL!! Today was the first day in a very long time that I questioned my love for my job. It took every ounce of strength to just not burst into tears the second they went home (thank goodness it was early day and they left at 1:30!!). Luckily for me, I had time to sit compose myself before teaching a class for my students and their parents (hence the blog post from school at 6:30 at night!).
Some days I complain about my kids, their parents, and even my co-workers sometimes. I am only human, right? But then I am reminded of something new they were able to do, or an idea or concept that finally clicked with them, and I am reminded of why I love.....with all my heart....what I do. I know that none of my students will ever see this post....but I want to apologize for "being a mean teacher" today. Even though you drove me to my wits end today, I care about each and every single one of you....even the smelly ones. I love all the hugs I get every day (no matter how mean I might have/or am being), all of the beautiful artwork I get, and I love being told that I am the best teacher they have ever had (they forget that I am the only teacher they have ever had). Thank you for letting me be your teacher.....I promise tomorrow I will be "Happy Mrs. Romero"!!

Slightly boring......
Well, what can I say about the past 2 weeks....not much. We are boring....work, school, work, and more school. There have been so many times I have sat down at the computer to write an update....but can't think of one singel thing worth writing about. So, today I had to rack my brain to think of something of note from the last 2 weeks. So, here are a few highlights.....
The Saints won the Super Bowl....and we won $80 because we had the winning numbers at the end of the game (thank you Mom for writing our names in the winning squares!). Gotta love winning by pure luck!! Needless to say, we are not football people, but having the winning numbers made the last few minutes of the game a lot moe entertaining. So, because of our luck I will say.....GO SAINTS!!
Not only is the Super Bowl a time to frivolously bet money on random numbers, it is also time to enjoys some delicious treats! Well, I basically needs something that required little to no thought (because I was fighting a NASTY headache, than nearly made me cut my head off). I knew I could rely on my second love (after Cameron of course) The Food Network to provide me with a recipe that was simple enought for me to make, since at that point my cognitive ability was that of a 5 year old. Well, one of my favs....Giada De Laurentis.... a chef and foodnetwork personality who never lets me down, came to my rescue! Mmmmm.....White Bean Dip w/ Pita Chips.
Here is the recipe......I think you will enjoy this if you are a hummus lover...as I am!
Ingredients
1 (15-ounce) can cannellini beans, drained and rinsed
2 cloves garlic
2 tablespoons fresh lemon juice
1/3 cup olive oil, plus 4 tablespoons
1/4 cup (loosely packed) fresh Italian parsley leaves
Salt
Freshly ground black pepper
6 pitas
1 teaspoon dried oregano
Directions
Preheat the oven to 400 degrees F.
Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.
I had every intention of making my own pita chips, as I have in the past, but the pita gods were not on my side. I went to 3 stores looking for pita bread, and had no luck. So I resorted to using pre-packaged bagel chips. They were good, but no as good as pita chips fresh from th oven!
School has been rough the past few weeks. I now have another student who has seen how much attention my non-potty trained student gets, and has decided she is no longe going to use the bathroom on her own either. WONDERFUL!! I think I nipped that in the butt though.....there is no way I am going to deal with 2 non-bathroom users!!!
Wednesday we celebrated the 100th day of school! It was good times as usual....filled with lots of fun math activities. It's one of my favorite days of the whole year! Lucky for me, this year it fell on a Wednesday... early day....and our Jump Rope for Heart day. We were movin' all day!
We also celebrated Valentine's Day on Friday....which usually is one of my favorite days of the school year. Well, not this year! My kiddos were higher than kites! It was worse than Halloween and Christmas COMBINED!! Not sure what the deal was....but I am sure glad a 3 day weekend followed my crazy day!
Cam and I really aren't big fans of Valentine's Day, so we always keep it low key. In an effort to save money, and because we really don't feel the need to buy each other presents to show each other that we love each other, we opted to forgo presents. Cameron worked all day long, so I told him I would make him whatever he wanted for dinner....and do you know what he chose? Hamburgers and roast carrots!
We stayed home and had a great dinner and watch a few Olympic events. I just LOVE the Olympics!! It made for a great, and very relaxing Valentine's Day. No frills....just how we like it!!
I hope everyone had a Valentine's Day celebration that was to their liking! Now, let's hope for a pee and poop free week at school!!
